The New Bill’s Southampton | Press Visit

Vibrant colours, insta-worthy cocktails, ‘The Ivy’ styled details, oh and a blooming cute flower wall! The new Bill’s Southampton has re-opened now with seasonal specials on the menu and summery desserts. Perfectly enjoyed in the heart of Southampton surrounded by the Old Town Walls.

September pulled through with the weather and we were lucky enough to have a warm evening to enjoy Bill’s outside seating area. We started our evening off with some cocktails, a Bill’s Collins and a Raspberry and Rose Collins (Mum and I are biiiiig fans of Gin so we very much enjoyed Raspberry and Rose Collins.)

We shared the Halloumi and Hummus Plate as a starter which was a huge portion of halloumi, hummus, Tzatziki, avocado and foccatia.

For mains, mum opted for the Pan Fried Sea Bass, which she said was full of flavour and a really generous portion. I went for the Pan Fried Chicken with Wild Mushrooms and it was a tasty dish, however, my chicken was a little overcooked. Despite this, the mash was delicious and (if you’re a mushroom fan) the creamy mushroom sauce was lovely!

To finish up our meal, we couldn’t manage a whole pudding each so we decided to share… Que the dilemma of me wanting the Warm Tripple Chocolate Brownies (alwaysssss) and mum not liking brownies (don’t even ask). So we went for the Melting Banoffee Sundae which was just the right sized pudding for us! Mum decided to finish off with a black coffee while the loveliest waitress tempted me with the Frozen Watermelon Margarita! They were also happy enough to make me one without ginger in it, which I was very grateful for.

We’d been so busy catching up (mum had just got back from Prague and I had just gotten home from Montenegro) that we completely forgot about having a look inside until one of us went to the toilets. We decided we couldn’t end the night there so headed inside for another round of drinks. This time we had the Elderflower and Apple Collins and the Rhubard Rossini.

The decor inside is eclectic and beautiful and made for a lively and atmospheric place to have dinner or drinks on a Friday night in Southampton! The green and blue tones across the restaurant make for a cosy vibe which I think will feel lovely as Autumn rolls in. They have also made for more spaces to have drinks at the bar which I feel longs out an evening of drinks and dinner and makes it a much nicer occasion.
